From the estate named for its AVA, Chalk Hill Estate Sauvignon Blanc ($33) melds bright, sunshine-filled lemon-lime citrus notes with juicy honeydew, crushed stone, and lemon blossom, with just a hint of creaminess. This is thanks to seven months of barrel aging that included three months of battonage, or stirring the lees (yeasts) while the wine aged to add texture, structure, and a touch of creaminess the technique adds to aging wine.
