Begun in 1925, and run today by the 3rd generation of the family, Famiglia Pasqua showcases the classic wines of Italy’s Veneto region, giving each selection its own unique twist, including their Pasqua PassioneSentimento Bianco Veneto ($17). Crafted from Garganega (the variety of Vento’s Soave), hand-selected grapes are left to dry for a brief period in crates in the drying loft, concentrating the aromas and flavors of the fruit, increasing the sugars. This Appassimento process, classically used for Amarone, gives texture and richness to the wine, intensifying flavors of white peach, apricot, and mango, melding seamlessly with a touch of minerality, cream, and lemon curd. #cheers
