New Year’s Bubbles – What To Drink Now

You made it through 2021….thankfully! I think we are all ready to put this year behind us as we safely to get back to some sort of normal in 2022! And, with new adventures on the horizon, toast the night and the start of the new year with fabulous bubbles.

Structured and complex, with richness and harmony, Goldeneye Anderson Valley Brut Rose ($65) shines utilizing classic varieties and traditional methods, with American sensibility. Crafted from the best blocks of fruit from Goldeneye’s Anderson Valley estate, blending 60% Pinot Noir/40% Chardonnay. After harvest the grapes are whole cluster pressed to ensure freshness and to maintain vibrancy in the fruit, aged sur lie for 10 months in neutral oak, (adding body and texture,) along with 2 years en triage (on the yeasts in the bottle) the layered sparkler harmoniously balances wild strawberry, golden peach, and nectarine notes with fresh baked bread and marzipan. Complex without being weighty, with incredible acidity, keeping you going back to enjoy again and again.

With a microclimate similar to that of Champagne, Graham Beck’s South African sparklers shine when producing refreshing, bright, aromatic bubbly from the traditional varieties of Champagne, made in a style to highlight the freshness of the fruit. Graham Beck Brut ($20), blending 51% Chardonnay/ 49% Pinot Noir leaps from the glass with vitality and liveliness. Aromas of lime leaf and fresh cream open, melding with hints of golden apple and pear, toasted bread, and honey on the palate. Layered with a focus on the fruit and the freshness, making this ideal to wake up the palate at the beginning of the night.

Though known for their robust, powerful Napa Valley and single-vineyard Cabernet Sauvignon wines, Baldacchi Family Winery continues to create new wines for their portfolio, utilizing their estate vineyards that span from one side of Napa to the other. From their Carneros estate, and tiny production (250 cases only!) Baldacchi “Pops” Brut Rose ($50) sparkles with thousands of tiny bubbles, awakening the palate and delivering energy and spirit. Juicy and fruit-forward, layering ripe raspberry and cherry with blood orange, apricot, and red apple, the inviting wine is bright, fresh, and clean thanks to the wine having zero residual sugar, ensuring that the palate is very dry while being fruit-filled.

Crafted for almost 120 years in the traditional method from in the picturesque mountains of Trentino-Alto Adige, Ferrari Brut Trento DOC ($20) is 100% Chardonnay aged 20 months en triage, giving texture and body while ensuring the crisp freshness inherent in the high-elevation fruit is maintained. An effortless go-to for pairing, especially with hard, aged parmesan or gouda, the easy to enjoy bubbly leaps from the glass with aromas of white flowers and fresh bread, with baked apple, ripe melon, lemon zest, and hazelnut.
