We tend to prefer sparkling wines on the drier side, with a low level of dosage, if any. Laurent-Perrier Blanc de Blancs Brut Nature Champagne delivers a gorgeous, clean, crisp, and dry palate of orchard fruit, fresh citrus, balanced almond, and freshly baked brioche. The traditional method of production Champagne is crafted from hand-selected 100% Chardonnay fruit with bright natural acidity to remain fresh while aging on the lees for eight years. This is the ideal wine to pair with caviar, oysters, or any seafood, or just pop the bottle and toast with the sparkler as an aperitif on this special holiday.
From high-elevation vineyards in Aremnia’s Vayots Dzo province, Keush Blanc de Blancs Extra Brut is also a sparkler with very little dosage, keeping the palate crisp and dry. The sparkling wine is composed of two native varieties to the country, Voskehat, and Khatouni, creating a sparkler with layers of honeycomb, ripe orchard fruit, and toasted almond. Crafted using the traditional method, lees aging of this beauty was 36 months, giving it well-rounded texture, with notes of hazelnut and buttered biscuits.
One of my favorite go-to sparklers from Spain is Vilarnau Brut Organic Reserva Cava. The traditional method sparkler isn’t expensive and always delivers, whether toasting with tapas, enjoying over a meal of anything from poultry to seafood to pasta, or simply enjoying on its own while watching the Thanksgiving Day Parade. Crafted from organically grown Macabeo, Xarel.lo, and Parellada, the Spanish varieties authorized for Cava production, the dry sparkling wine is fresh and lively, with thousands of tiny dancing bubbles. The wine ages for 15 months on the lees, giving a hint of creaminess that melds with a pop of bright, balanced acidity and flavors of fresh lemon citrus and green apple.
