We’re Tasting: Summer Cocktails

Summertime is all about pool time and tasty cocktails with a twist.  I don’t like super sweet cocktails, so mine usually include a simply mixer of seltzer or club soda with the spirit and maybe a sqeeze of lemon or lime, but both of these also include a touch of low-sugar/low-cal lemonade mixed with fresh herbs from the garden. Fresh herbs, from mint to thyme to basil to cilantro can add a pop of unexpected flavor and freshness that lightens up any drink.  Mix one up this weekend to sip in the sunshine.

lemonadeWe had this one while on my birthday get away to Palm Beach.  I doctored up their Ultimate Lemonade by adding fresh mint and cutting the portion of lemonade in half and topping off the cocktail with club soda for a little fizzzz.  Tasty and delicious

Ultimat Mint Lemonade
2 parts vodka of choice, Ultimat is a great one
1 part lo-sugar, low-cal lemonade
2 parts club soda
3 large mint leaves
1 lemon wedge
ice
Directions – Add vodka and lemonade with the mint to an ice filled cocktail shaker and shake until very cold.  Strain into a tall cocktail glass filled with ice and top off with club soda.  Garnish with a lemon wedge.

Raspberry Basil Lemonade
2 parts Van Gogh Raspberry Vodka, or other raspberry vodka
1 part lo-sugar, low-cal lemonade
2 parts club soda
3 large basil leaves
1 lemon wedge
ice
Directions – Add vodka and lemonade with the basil to an ice filled cocktail shaker and shake until very cold.  Strain into a tall cocktail glass filled with ice and top off with club soda.  Garnish with a lemon wedge.
