From one of the highest elevations in the Paso Robles region, DAOU Vineyards and Winery sits on 212 acres of beauty in the hills of the Adelaida District. With a focus on sustainability, and a commitment to gracious stewardship of the land, DAOU crafts elegant wines with balance, melding acid with tannin, concentration with structure. DAOU Cabernet Sauvignon ($55) opens with red fruits, like pomegranate, red plum, and cranberry with cassis and cherry, followed by dried woody herb, roasted espresso, and dark chocolate. The wine is bold, without being brooding, making it easy enough to be enjoyed on its own, or paired with grilled beef or lamb.
