We aren’t big dessert people…as I often say “I prefer to drink my dessert in a glass of bubbly or wine.” But with fruit looking so beautiful lately we have done a few fruit based desserts, including this one, that highlighted the flavors of summer with a delicious sweet touch.
Gary had purchased a bottle of housemade chocolate sauce with Becker Vineyard Riesling wine from Dude, Sweet Chocolate in Oak Cliff a few months ago and a topping for sweet peaches seemed like the perfect use for it. Add in some freshly whipped cream with a bit of sugar and just a touch of vanilla and you pretty much can’t ask for anything more.
Recipe:
Roasted Peaches with Dude, Sweet Chocolate Sauce and Vanilla Cream
Ingredients:
4 large ripe peaches
2 tablespoons lemon juice
1 tablespoon raw sugar
1 pint heavy whipping cream
1 tablespoon sugar
1/2 tablespoon good vanilla extract

Preparation:
Preheat oven to 375. Our original intention was to grill these, but we didn’t have any propane, so we resorted to roasting making the peaches super sweet and juicy. Cut the peaches in half lengthwise and remove the pit. Toss in a bowl with the lemon juice and 1 tablespoon raw sugar for about 5 minutes. Transfer to a baking dish and lay the peaches skin side up on the baking dish. Roast for about 15 minutes until very tender. Meanwhile add the cream, vanilla and sugar to a bowl and whip with a whisk or a mixer until stiff peaks have formed. Refrigerate until ready to use. When ready to plate place 1 whole peach (2 halves) flesh side up on a plate and drizzle with the chocolate sauce. Top with a mound of whipped cream and serve. Best served when the peaches have cooled a bit, but are still warm.
