The key is adding big flavor from a variety of herbs and spices, with just a touch of Sherry. Start it now and it will be ready before kick off. And, it is so healthy you can easily indulge in a Bloody Mary or two without feeling guilty.

Super Bowl Super Soup
Ingredients:
Again, you an add any veggie you have handy, whatever your favorites are. We used:
1 tablespoon grapeseed oil
1 large yellow onion, chopped
3 carrots, peeled and chopped
3 stalks celery, chopped
1 broccoli crown, chopped
3 garlic cloves, chopped
1 heaping tablespoon grated fresh ginger
6 oz baby bella or white mushrooms, chopped
2 green onions, ends removed, chopped
1 large can fire roasted tomatoes
2 tablespoons Sherry
2 tablespoons Worcestershire sauce
Juice and zest of 1 lemon
1 tablespoon white wine vinegar
1 teaspoon red pepper flakes
1 tablespoon chopped rosemary
1 tablespoon chopped thyme
1 tablespoon garam masala
1 teaspoon cumin
1 tablespoon chopped cilantro
1 teaspoon chopped dill
1 can black beans
1 can navy beans
1/2 cup shelled edamame
1/2 cup frozen green peas
1/2 cup frozen corn
4 cups chicken or veggie stock
Salt and pepper to taste
Preparation:
In a large Dutch oven or soup pot heat the oil over medium heat. Add the onion, celery and carrots and begin to sweat them, stirring often to make sure they don’t burn or brown. After about 7 minutes add the broccoli, garlic, ginger and mushrooms and continue cooking for another 5 or 6 minutes, stirring often. Add the tomatoes, dried spices, rosemary, thyme, Sherry, Worcestershire, lemon and vinegar, and season with salt and pepper. Cook for about 7 minutes allowing the flavors to meld. Add the remaining ingredients and bring to a boil, then simmer for 15 minutes. Adjust any final seasoning and serve with crusty bread.
